This is my first time baking bun. I have surfed around for the dough recipe and i got it. Kit has bought me a bread machine and i have been baking own bread lately. Today i thought i'll try the curry bun.
For the curry filling, i have followed my dad's curry recipe. Well, instead of chicken i have used pork coz i have ran out of chicken breast.
Curry Recipe:
2 cups of thinly sliced chicken/pork/beef
3 diced cube potatoes
4 cloves of garlic
4 small red onion
2 shallots 1 small piece of ginger
4 tablespoon of meat curry powder( i used malaysia Allagapas brand)
2 teaspoon of chili powder
Step 1: Peel all the garlic, onion, and ginger and blend them into a paste form.
Step2: Season the meat with some salt, sugar and pepper. if u r using chicken, add some chicken stock powder.
Step3: Mix the curry powder and chilli powder into the onion,garlic and ginger paste to make red in colour. If u r in malaysia, u dun have to blend the ginger,onion and garlic ingredients coz u can buy it at the wet market with the "chili boh" in it.
Step 4: Heat the pot with 4 tablespoon oil and start saute the curry paste till fragrant
Step 5: Stir fry the diced potatoes in another pan..while waiting for the curry paste to get fragrant
Step6: After the curry paste get some fragrant, pour in 1 cup of milk/coconut milk (i prefer milk-more healthy)..hehe
Step 7: Stir in the seasoned meat and cook it for 5 mins
Step 8: Pour in the half cooked potatoes into the curry and cook in a slow heat for 10 mins
Step 9: Add some salt and pepper to taste.
Step10: Stir constantly till the curry gravy got dry.
Bread Recipe Dough
2 tablespoon sugar
2 1/2 teaspoon instant yeast
1 1/4 teaspoon salt
3 cups all purpose flour(if u r in Canada, u can use Canadian all purpose flour, if u r in US/other country u use bread flour)
1 tablespoon olive oil/vegetable oil/shortening
1 large egg
1 cup + 2 tablespoon warm water
Topping
1 egg,ligtly beaten with 3 tablespoon water
Bread machine method: Place all the dough ingredients into the pan of ur bread machine in the order recommended by the manufacturer (usually, liquids first, yeast last). Program the machine for dough or manual, & press Start. Check the dough about 10 mins before the end of the final kneading cycle and adjust its consistency as neccessary by adding additional water of flour to form a soft, smooth ball. Allow the machine to complete its cycle, then allow the dough to remain in the machine till it's tripled in bulk, perhaps for another hour.
Manual/mixer method: In a medium-sized mixing bowl, combine all the dough ingredients, and mix until the dough starts to leave the sides of the bowl. Transfer the dough to a lightly greased or floured surface, and knead it for 6 to 8 minutes, or until it's smooth and shiny. Or knead it in a mixer using the dough hook.
Place the dough in a lightly greased bowl or rising bucket,turn to coat, cover the container with plastic wrap, and let the dough rise till it's trippled in bulk. (approximate 2-3 hours)
Shaping: Turn the dough out onto a lightly greased or lightly floured work surface, and divide it into 8 pieces, each abt 3 ounces (85g), a bit smaller than a tennis ball. Cover the dough pieces, and let them rest while u prepare the filling of ur choice.
Cover the unsed dough pieces with a damp cloth or plastic wrap as u work. Working with one piece at a time, use ur fingers to flaten it into a 4-inch round whose edges are slightly thinner than the center. Place a heaping tablespoon of the filling in the center of the dough, pull the edges into the center to enclose the filling, pinch to seal, then give the pinched edged a twist, to seal even more securely. Place the buns sealed-side-down on a lightly greased or parchment-lined baking sheet. Repeat with the remaining dough pieces and filling,placing buns abt 2 inches apart on the baking sheet. Cover the buns with proof cover or lightly greased plastic wrap. After 45 mins, brush them with the topping, and re-cover. After 1 hour(15 mins later), brush them agian with the topping.
Baking: Bake the buns in a preheated 350F ove for 30 mins or until they are golden brown.

**** I have tasted one of the bun...it taste not too bad...for a first timer..although the bread texture is a little bit dry..maybe i can improve it next time.. :)
I hope kit will like it..maybe Ryan too..yup..he is learning how to eat chili now.. have to..malaysian background maa :)*****
